GILLE Christmas Ice Cream Popsicles

150 g GILLE Small Hearts Ginger Snaps
100 g cream cheese
200 g white chocolate
Silicon popsicle moulds
Wooden popsicle sticks
Gel colouring or food colouring drops
GILLE Small Hearts Ginger Snaps for decoration

Crush GILLE Small Hearts in a blender and combine the crumbs with the cream cheese. Press the mixture into the silicone popsicle moulds and add wooden popsicle sticks. Alternately, you can roll bite-sized balls. Place the popsicles or balls in the freezer. Melt the white chocolate in a double boiler. Remove the frozen ice cream from the moulds and dip them, or the ice cream balls, one by one in the melted chocolate to coat and let them harden on parchment paper. Decorate each one with a GILLE Small Heart and return to the freezer until serving.
